Due to climate change, I have noticed a significant shift in the taste of Ethiopian coffee over the past 2-3 years. Hamasho, grown at a higher-than-usual altitude, experiences larger temperature fluctuations, allowing the coffee cherries to mature more slowly, which results in a fuller sweetness.
